Buttery Maine Lobster Mashed Potatoes
Two great tastes that taste great together: Maine Lobster and Maine Potatoes!
Buttery Maine Lobster Mashed Potato
recipe adapted from The Kilted Chef, Alain Bossé
5 pounds Maine potatoes
1 medium sweet onion, chopped
2 cloves fresh garlic, chopped
1½ cups hard shell Maine lobster meat, chopped
1½ cups grated fresh Parmesan cheese
½ cup heavy cream
¼ cup butter
Coarse sea salt to taste
Milled pepper to taste
Directions: Boil potatoes and onions in water for 10 -15 minutes until tender; drain.
Add garlic, cream, butter, salt and pepper mash until smooth. Then fold in lobster, chives, and cheese. Garnish with lobster claw and enjoy.
